Oven spinach “greenies”, like brownies… but healthier!
Pre-heat the oven at 180°C/350°F.
Cook the spinach in a large open pan on medium heat with 4 tablespoons of water. You will see that the spinach cooks quickly and that the leaves at the bottom of the pan will be tender while the top ones will not.
Make sure to constantly bring the bottom leaves that are already cooked to the top of the pan, bringing the raw leaves to the bottom. Cook until the leaves are just cooked. They should look wilted.
Slightly blend the spinach with the garlic cloves. Just a little bit otherwise you will end up with a spinach soup.
In a rectangular plate put the blended spinach, with 2 eggs, the grated cheese, 2 spoons of heavy cream (if you want it more creamy), add salt and pepper. With a fork, mix everything together in the plate and flatten it to give it the potential appearance of a flat brownie.
Put it in the oven at 180°C/350°F for 30 minutes.
Let it cool down, cut it into small rectangles (like brownies).
Ready to eat.
