Brazilian Banana Cake. A Childhood Delicious Recipe. Yum
This Brazilian Banana Cake is a must in Brazil. Traveling there without having one with coffee, for breakfast or dessert, isn’t a full Brazilian trip. This is a fluffy, moist and simply “gourmand” cake packed with bananas, that will be your best friend or little sugary treats.

  1. Pre-heat the oven at 200°C.
  2. Cut 5 bananas into 6 pieces. Cut the 6th banana into thin slices (that we will use for decoration later).
  3. Mix in a blender the large bananas pieces, the oil and the eggs until you get a smooth texture.
  4. Put the mix in a bowl, add the rum and blend.
  5. Add the flour, the sugar, the vanilla sugar and the yeast. Blend until there are no lumps. Pour the batter into a mold.
  6. Add the banana slices on top of the cake adding the cinnamon and sugar mix. Mix a bit of sugar with cinnamon into a bowl to sprinkle it later on a cake.
  7. Put the mold into the oven for more or less 30 minutes at 200°C. If the cake is still a bit too wet keep it in the oven 5 more minutes (or until the cake gets dry).
