Spinach with Yogurt Salad
Cook the spinach in a large open pan on medium heat with 4 tablespoons of water. You will see that the spinach cooks quickly and that the leaves at the bottom of the pan will be tender while the top ones will not.
Make sure to constantly bring the bottom leaves that are already cooked to the top of the pan, bringing the raw leaves to the bottom. Cook until the leaves are just cooked. They should look wilted.
In a bowl mix the Greek yogurt, the garlic, and the olive oil and season with salt and pepper.
Add the spinach and gently mix.
Ready to eat.
