Pizza Dough Recipe.

First things first: in a stand mixer (I use a KitchenAid one), put the flour, the yeast the salt and sugar and mix it for 2 minutes.
While the mixer is working add slowly the warm water. Start by 1/2 mug, then when you see that the dough is starting to appear, add another 1/2 mug, let it mix more. And add the final 1/2 mug. Let the mixer do its job for 3 to 5 minutes.
Add the spoons of olive oil and let the mixer continue to work for 5 more minutes.
If the dough is too wet or too sticky add more flour one table spoon at a time. And if it is too dry, add water (again: one tablespoon at a time).
When the dough forms a firm ball, stop the mixer, take the dough and put it on a surface (where you have previously put flour on it). Form a ball and knead it for 5 minutes. Transfer it into a bowl (previously coated with some olive oil) and let it rise for 1.5 hours.
Put flour on the surface you want to use to knead and flatten the dough. Transfer it to the surface and divide the dough into 3 parts. Put a clean kitchen towel on them and let them rest for 10 minutes.
It’s time to knead the dough (quickly) and roll it out using a rolling pin. They need to be pretty thin because they will rise in the oven. Put them onto previously floured baking sheets and ready to go into the pre-heated oven. Do not forget the base and the toppings!
