These oven spinach “greenies” are one of my favorite dishes because they are super easy to make. But also because spinach is considered to be a super food. Apart from the obvious vitamins and minerals, spinach contains proteins and iron, 2 nutrients that vegetarians need to guarantee into their daily diet. Finally, this recipe is inspired by a Turkish recipe. And Turkish cuisine being one of my favorites, it seemed obvious that I wanted to share this one with you.
So why greenies? Well because you can cut them into small rectangles and they look a little bit like brownies. Except they are greener. And healthier. Definitely healthier.
The How-To Oven Spinach “Greenies”

- 800 grams fresh spinach
- 2 garlic cloves
- 2 eggs
- 200 grams grated cheese (feta or whatever cheese is left on the fridge)
- salt & pepper
- 2 spoons heavy cream (optional)

- Pre-heat the oven at 180°C/350°F.
- Cook the spinach in a large open pan on medium heat with 4 tablespoons of water. You will see that the spinach cooks quickly and that the leaves at the bottom of the pan will be tender while the top ones will not.
- Make sure to constantly bring the bottom leaves that are already cooked to the top of the pan, bringing the raw leaves to the bottom. Cook until the leaves are just cooked. They should look wilted.
- Peel the garlic cloves.
- Slightly blend the spinach with the garlic cloves. Just a little bit otherwise you will end up with a spinach soup.
- In a rectangular plate put the blended spinach, with 2 eggs, the grated cheese, 2 spoons of heavy cream (if you want it more creamy), add salt and pepper. With a fork, mix everything together in the plate and flatten it to give it the potential appearance of a flat brownie.
- Put it in the oven at 180°C/350°F for 30 minutes.
- Let it cool down, cut it into small rectangles (like brownies). Ready to eat. Bon appétit!

Oi querida! Pro iogurte pega um iogurte grego idealmente, senão qualquer iogurte natural sem açúcar. Nele você incorpora uma colher a sopa de azeite, uma de café de limão, sal, pimenta (de moinho melhor) e o conceito é adicionar bastante ervas picadas entre essas: manjericão, cebolinho, salsa, dill. E o segredo? Um dente de alho picado fininho 🙂 Me diz se deu certo! Um beijao!!!
