Homemade Bread recipe. A little effort for a rewarding result. Yum
There are little gestures as nice to a guest than having them waking up with the smell of fresh homemade bread. When friends are coming over, I always try to serve them fresh bread. To be honest it is not much work if you have what you need and if you wake up 40 minutes before they do!

  1. Start by putting all the ingredients into the stand mixer and mix them all for 8 minutes with the kneading knot on low speed (or with the plastic blade if you are using a food processor).
  2. Transfer it to a large recipient and let the bread dough rise for 12 hours.
  3. Pre-heat the oven to 250°C/480°F with the cast iron casserole dish in it.
  4. Clean the countertop, put flour on it, and put the bread dough on it. I add a bit more flour on the top of the dough to make the kneading easier (otherwise it might be sticky). Take the borders of the dough and fold them towards the middle of the dough. One part, after another. The top of the dough will look a little bit messy but it is ok (this will be the bottom of the bread later so no problem, you will see later). Do this operation several times until you feel you have a firm dough.
  5. VERY CAREFULLY take the cast iron casserole out of the oven. Put some flour on the bottom of the casserole evenly and place the dough in it. The bottom of the dough should the part where you see the dough folded. The smooth side should be on top.
  6. With a sharp knife, make some diagonal lines on the bread. When the bread will rise, it will be able to open up thanks to this technique.
  7. Close the casserole and let it cook for 20 minutes.
  8. Take the casserole out of the oven and take the lid out of it. Put some water in the insert pan and put the casserole back in the oven. Let it cook for 15 to 20 minutes more still at 250°C/480°F. Take you bread out when it looks slightly brown on the upper borders (like the picture here).
  9. Let it cool down for 15 minutes at least before serving. One tip: if you have a few fruits around and you feel their are ripped, make a little jam while you wait for your bread to cool.
