Flat beans have many identities, they are also called “Romano beans”, or “Italian beans”. They are very flavory and require some more patience when prepared (extra cooking time needed) but it is definitely worth the time. I really like this recipe because it is very very easy to do and it guarantees that you will get your dose of veggies for the day. Little tip: try picking the ones that are more flat, unblemished, avoiding those that have big apparent beans. Choose well as there are 2 things to do well in this recipe: good beans and a well-seasoned tomato sauce.

- 500 grams flat beans
- 1 bottle tomato passata
- 1 onion
- 2 garlic cloves
- 4 tablespoons olive oil
- 1 tablespoon dried oregano
- 1 vegetable stock cube
- 1 teaspoon dried chili flakes
- 1 tablespoon maple syrup
- fresh basil
- salt & pepper

- In a pan put the flat beans (previously washed) and cover them with water. Add the vegetable stock cube and cook for 6 to 8 minutes.
- Chop the onion, garlic cloves and basil leaves.
- In a pan cook the onion with 2 tablespoons of olive oil. When golden add the garlic. One minute later, add the tomato passata, the oregano, the maple syrup, the chili and the chopped basil. Add salt.
- In a plate serve the tomato sauce on the bottom. On top of it add the beans, drizzle with the rest of the olive oil, add salt and pepper. Ready to eat and bon appétit!
