  1. Rinse the beans under fresh water and drain them.
  2. Put them in a pot with 500ml of water (you can add a vegetable stock cube if you want). Let them cook for 1 hour with the lid closed. Check the water level on a regular basis to make sure you are not burning anything.
  3. Chop the red onion, the garlic and the bell pepper.
  4. Add the chopped onions, garlic and bell pepper to the pot. Add the spices, the rest of the water, the tomatoes, the tomato paste, the salt & pepper. Cook for 4 hours. Add water if needed.
  5. Serve in a bowl and add your favourite side dish. It can be rice, but I personally love it with a fresh tortilla or a big piece of bread.
  6. Add the chopped fresh cilantro and/or chives, add a tablespoon of sour cream and some grated cheddar cheese and serve. Ignore the sour cream and grated cheese if you want a vegan option!
