Welcome to my recipe of Eggplant carpaccio! Eggplants are a Mediterranean favorite. It is the type of ingredient that if you put into a dish you are pretty sure to obtain a good result. Additionally to their delicious taste, they are also supposed to have health benefits associated to the decrease of heart diseases and would have anti-carcinogenic properties. It also seems that eggplants have the ability to decrease cholesterol levels and would have benefits on the memory. This is one of my favorite, yet easiest recipes I have. Vegan, dairy-free, gluten-gree, it fits any possible diet. I called it « Eggplant Carpaccio » because the secret of it is that the eggplant is cut in very thin and round layers as in a traditional carpaccio. However, this carpaccio is cooked on…

“Eggs en cocotte”. Breakfast, lunch or dinner covered!

Known as “oeufs cocotte” in French, this dish is named for the ramekins in which the eggs are cooked: Eggs en cocotte. Using « cocotte » (a.k.a.small  casserole dish) is a great way to prepare your eggs. Very, very French. This recipe is very easy and I am really fond of it as it really shouts « comfort food » or« awesome breakfast ». The idea is that there are almost 2 dishes in 1: the eggs are cooked with mushrooms in a casserole dish and in parallel there is also a stuffed mushroom. I like it because it gives 2 consistencies to the mushrooms: one where the mushroom is chopped and one where the mushroom is in one piece and is stuffed. Flat beans have many identities, they are also called “Romano beans”, or “Italian beans”. They are very flavory and require some more patience when prepared (extra cooking time needed) but it is definitely worth the time. I really like this recipe because it is very very easy to do and it guarantees that you will get your dose of veggies for the day. Little tip: try picking the ones that are more flat, unblemished, avoiding those that have big apparent beans. Choose well as there are 2 things to do well in this recipe: good beans and a well-seasoned tomato sauce. Let’s do it?

Sautéed Portobello Mushrooms & Potatoes

Now there are few things more comfort food than these sautéed mushrooms and potatoes. And there are few chances that this dish won’t turn out good. Things to keep in mind to make it work? Keep your fire low when you are cooking the mushrooms and when you are mixing the potatoes and the mushrooms at the end. The amount of margarine (or butter) depends on where you stand regarding your fit diet. You know the story: the more the margarine, the better the taste…  And having fresh herbs makes the whole difference… Oh! And before I forget: the garlic quantity also depends on the crew who is eating it. I put 3 here but I can use up to 5! Vampires, watch out! The How-To Sautéed Mushrooms and Potatoes
